Sambal udang kering dua terung

Assalamualaikum .... Sambal lagi??? Sambal memang mudah dan ringkas. Ditambah pula dengan mulut ni yang sukakan kepedasan, menjadikan sambal memang dekat di hati. Untuk juadah tengahari yang sepantas kilat pada hari-hari Jumaat, sambal seringkali menjadi pilihan. Dan kali ini kita persembahkan Sambal Udang Kering bersama Dua Terung. Terung pipit (belanda) dan terus panjang. It's marvelous. Terus pipit ni boleh dikatakan hasilbumi yang 'petik dan masak' kerana pokoknya subur menghijau di bahagian depan rumah. Asal pokoknya tumbuh secara tidak sengaja, bila dialihkan ke tanah, Alhamdulillah ianya memberikan rezeki untuk kejiranan. Inilah yang dikatakan tidak sia-sia berbudi pada tanah. Eggless Purple Coleslaw

Assalamualaykum, This was our dinner last night. We had the coleslaw as a side dish together with the burger. And it is eggless as I am using the eggless mayonaise. Just like the chef in Farm Rules (Astro Channel 727) say, 'Chop Chop .....' , this is also about chop, chop add sauce.  I used about 5 layers of purple cabbage and about 2 inches of carrot for three servings. I thinly sliced the cabbage and grate the carrot. For the sauce (Sorry if I got it wrong), I used: 2 tablespoon eggless mayo 1 teaspoon lemon juice 1 table spoon sweet condensed milk about 1 tablespoon or less olive oil salt and pepper to taste Simply put everything into a bowl. Whisk it to thoroughly mix it. I added olive oil to smoothen the mixture because eggless mayo is thick and tend to be lumpy. This is my first attempt .... and ... Alhamdulillah ... it's delicious. Sweet Potato salad

Assalamualaykum, Having simple menu tonight. Some sandwiches and salad. Here goes my salad: I have some left over baked sweet potatoes from the morning. I shred some green lettuce. And for the vinaigrette   I simply used the lemon juice + olive oil + some salt + pepper. Mix everything well. And you get a healthy and delicious salad. For the sweet potato: I thinly sliced it. Arrange it on the hot grill that has been sprinkled with some olive oil, Then sprinkle salt and pepper and olive oil on its surface. Turn it over when it seems ready (just do not let it burnt). To make a salad, I further cut it to finger sized.  Enjoy.

Masak lemak Daun Kaduk

Assalamualaikum Pokok kaduk tumbuh membiak di sekitar rumahku dengan suburnya. Adakalanya terpaksa dicantas buang kerana telah menyesakkan pandangan. Tertanya-tanya juga apa lagi yang boleh dibuat dengan daun kaduk ni. Kata pepatah, "Malu bertanya sesat jalan". Dalam bersembang-sembang bersama rakan sepejabat mengenai pokok-pokok herba ni, beliau mencadangkan untuk buat masak lemak daun kaduk, Sedap, katanya. Well, why not? Inilah hasilnya. Caranya: Balik dari pejabat, aku memetik beberapa helai daun kaduk (sebab ini peringkat percubaan makanya tak boleh masak banyak, bimbang jadi pembaziran pulak). Ada la dalam 20 helai daun kaduk.  Dicuci bersih.  Kemudian dicelur. (Celur untuk mengurangkan baunya. Kalau OK dengan baunya, tidak perlu celur) Sementara tu, aku mula mengopek bawang merah dan putih.  2 biji Cili api dipatah-patahkan aje (sebab malas nak menumbuk) Seterusnya, rebuskan saja bawang, cili api, ikan bilis dan serbuk kunyit. ...

Stir Fry Asparagus

Assalamualaikum, Having kakak at home for her semester break is a blessing. Happy to see food for dinner is ready. She made spaghetti bolognaise this time round. Ibu just feel like having some greens in the diet. A very fast solution is to fry the asparagus. I made it differently this time: I had my asparagus cut (not really cut, but i break it using the bare finger) into about 1 inch. I put it on a hot grill, and sprinkle some olive oil, salt and pepper. The garlic chopped and also dumped onto the grill. When soften, mixed the two together and enjoy it with the spaghetti. It is really fast and tasty. Enjoy. Wassalam.

Kicap..o..kicap

Assalamualaykum, Kicap ... o ... kicap. Maaf, ini bukan iklan kicap. Tapi masakan hari ni tiba-tiba terlalu berkicap. But, this is what my husband love the most. Anything berkicap is always his favourite. As the wife, we cook as what he likes. Jadi tema hari ni KICAP. Top: Telur masak kicap Bottom: Kacang panjang goreng kicap. Ini aje lah yang sempat aku masak untuk juadah Jumaat. Maklum la ... sampai rumah hampir pukul 1.00 tengahari, aku terus meluru ke dapur dan memulakan tugasa seperti yang dirancangkan (while driving, I have everything planned in my head: what to cook; what needs to be done first; and how will the job sequence be).  Mula-mula, masak nasi. Then goreng telur. Sambil menggoreng, aku mula mengupas bawang-bawang yang diperlukan untuk kesemua juadah (2 je pun...). Bila telur dah siap, bawang pun dah siap untuk memulakan masak kicap telurku. Fresh Chive Fried with Shrimp

Assalamualaikum, Thinking of what to cook is not always interesting. At times we really ran out of idea. Browsing will sometimes help. Looking into the fridge for your stocks is another approach. Looking around your house could be another option. The appetizing fresh chive fried with shrimps I recently went around the house, into my Herbs Garden  and found some chives ready to be harvested. A quick search with the help of Mr Google found me with this interesting facts about chive: As a family of garlic and onion, chives is high in allicin. Chicken Ball 'n Mushroom Soup

Salam all, Another healthy entry from me today. Not to say that other entries are not healthy, they are healthy but probably less healthy. As I normally write, 'Cooking is Simple'. Put everything into the cooking pot and whalla!, it's ready to be eaten. Preparing and cleaning requires a bit of your extra effort --- bab ni yang tak tahan, except if you have a helper. However, sometimes we can make the preparation time shorter by using the ready made ingredients, for instance this Chicken Ball that I purchased, the Ayamas brand. The mushroom , is also readily used. washed it thoroughly, remove the stem and they are ready to be cooked. No mess produced. Next, you need only to prepare some garlic and onion . For a cook, this is just a bliss. Follows will be the cooking steps. With couple of sentences -- dump everything into the pot, add some water , later add salt & paper to taste -- a here you are: You may also add any green leafy vegetables and some carrots ....

Fiddlehead Fern @Pucuk Paku

Salam all, During fasting month, we must not forget to take veges in our diet. Eating veges is essential and it helps protect our body from many harmful illness like cancer. A large amount of serving is required to stay healthy. Veges should be taken with every meals. But, during Ramadhan, its not easy to get the kids (especially) to take veges at 5am in the morning. Due to the dislike for veges, many people turn to supplements. The different color of veges has different benefit to health. But for this entry, just let's share a single colored vege ......the Fiddlehead Fern. Back in 1970s, when my aunt was staying in Kg Nakhoda, Selangor, there was a small creek behind her house. Broccoli Soup

Salam All, Have you ever face the problem in getting the kids to eat their vegetables? I do. My last resort would always be the 'VETO' power!! "With the power of a MOTHER, I command both of you to eat your vege." ( kena baca gaya cartoon He-Man hihih ) Another approach that I tried and was a success is making a vege soup. So here it is ...... THE BROCCOLI SOUP The ingredients: The broccoli Onion Whipped Cream Multi purpose flour mixed with some plain water Salt and pepper How to: 1. On a heated pan. saute the onion till tender and brownish 2. Add the chopped broccoli. Once the broccoli is tender, turn off the heat. 3. If your blender can uphold the heat, transfer everything into the blender, add some plain water and blend it until you obtain a smooth texture. 4. Stir Fry Baby Cabbage

Salam all, Let's Go Green. Since Monday, I have not cook rice for the family -- we had other than rice for dinner --- therefore, last Wednesday, I craved for a fresh fry of green vege. Dug my fridge and found a packet of baby cabbage. Here go, our side dish for today. A simple and quick dish, here it is: A packet of baby cabbage 3-4 cloves of Shallots and garlic A little bit of anchovies 1 table spoon of cooking oil Sprinkle of Olive oil Salt and pepper to season. 1. I simply soaked the vege for a little while in a table spoon of vinegar (read somewhere that it's good to do this to remove pesticide) 2. prepare shallot and garlic and saute for a while in a heated cooking oil. 3. Once the shallot and garlic turn brownish, add the anchovies. 4. Add some water in order not to burn the ingredients. 5. As the achoveies soften, add some salt. (salt was to retain the green color of the vege, besides to season it). 6. Finally add in the vege that has been washed thoroughly. Let it cook ...

Labu Air Goreng Halba @Fried Gourd

Salam All, Let's talk about the GOURD (labu air) today. From a reading in a book on the food that Rasulallah SAW likes, the gourd is one of his favourite. But, sorry, I forgot the exact name of the book. Sayur Kincam aka. Lily Buds

Salam, As usual my entry is the backdated entry. I cooked this last year, at mak's house (hah! lama tu .......), to be exact 26thDecember 2010 (tak la lama sangat....). We normally cook the dried lily buds, but this time it's the fresh lily buds. Mak got it from a cousin who went to Cameron Highland for his daughter's wedding. I, myself will never leave Cameron Highland without buying the lily buds. I just love it. MMMuahh.... Cooking it is simple. Just like frying any other vege. My version would be: The Ingredients 2 handfuls of fresh kincam (1 packet) 2 Fresh red chillies* 1 clove of onion* 3 cloves of garlic* 1 tablespoon of dried shrimp (you can change it to fresh shrimp or anchovies) Salt to taste Cooking oil All ingredients labeled * are to pounded or blended. How To: 1. Heat the cooking oil in a pan. 2. Fry the pounded ingredients till fragrant. 3. Add in the lily buds. 4. Add some salt. Ready to serve. Whalla!! EZ isn't it. And it's delicious too. Kerabu Campuran

Salam semua, Dah pun dua hari di tahun baru Masihi. Yang penting bagi kita adalah setiap hari mesti lebih baik dari hari yang sebelumnya. Ni nak kongsi resepi dulu-dulu. Resipi baru dah ada fotonya tapi belum sempat nak transfer, kira acilah jugak kalau kongsi resepi lama kan. Yang penting ikhlas..... Hari ni kita mencuba pula resipi kesihatan yang ringkas dan amat mudah dilakukan. Cuma 'tedious' kat part yang menghiris bahan2nya. Sebab, untuk buat kerabu, lebih cantik jika bahan2nya dipotong halus (at least I think so). Sekarang ni oklah, sebab anak dara sulung masih di rumah, boleh la buat kerahan tenaga .... esok2 bila dia dah ke asrama ... siapa yang susah? ibu jugak ...... tapi inilah pengorbanan ibu. Menghantar anak ke asrama bukan kerana membuangnya tapi berkorban untuk kejayaannya di masa akan datang. Okaylah, done with all the craps, now back to the recipe.
