Fluffy pancake with strawberry compote

Assalamualaikum Good morning everybody. Let's have breakfast. It's simple pancake today. But i enjoyed it with the homemade strawberry compote. Alhamdulillah. After several blogwalks, I decided to try this recipe from the famous Cik Mat Gebu's Dapur Tanpa Sempadan. And as usual with my own measurement and fittings: 1 egg 1 teaspoon baking powder 1 cup plain flour some fresh milk to the correct consistency pinch of salt Simply add everything in a bowl to form a batter. Later, ladle it onto a non-stick frying pan. You can see it will start bubling. Flip it.  Wait till the other side is golden colour too then remove from the pan to your plate. Eggless Scones

Ingredients: A cut-n-paste from Anna Olson's   2 cup all-purpose  flour ¼ cup  sugar (I used brown sugar) 1 Tbsp  baking powder ¼ tsp salt (#omitted because I used salted butter) 1 Tbsp finely grated lemon zest ½ cup cool unsalted  butter , cut into small pieces (I used salted butter) ½ cup whipping  cream (I used buttermilk) ¼ cup 2% milk, plus extra for brushing 1 large  egg (#omitted because Sabrina cannot take eggs) 1 tsp  vanilla  extract 1 cup  fresh  or frozen cranberries (#omitted~ sorry, not at home) Directions: 1. Back-to-school : Congo Bar + Aglio Olio

Assalamualaikum. Back to school. Mothers are always busy. Preparing what can brought back with the kids to their hostel. In my case, I asked the kids in a very much advance. So that I could prepare the ingredients, and prepare myself for the labor work (ouch!!!) mentally and physically. And this time, the kids opted to have Aglio Olio (perhaps because they only had a small portion the last time I made it) and Congor Bar. Atikah requested for the congo bar and Sabrina requested for the Aglio Olio. But I'm making it extra so that many more could share the feast. The congo bar recipe is simple. Atikah can now make it with very tiny supervision. Cekodok Pisalabu

Assalamualaikum.... Hari ni nak kongsi something my mom created and I follow ...... Cekodok Pisalabu is actually a combination of " PISA ng + LABU ".... mashed together and becomes cekodok. It is a sweet tooth kuih dan you can enjoy in the morning or evening as you like. When Mak first made it, we were playing the guessing game ... is it a cekodok pisang or cekodok labu .....? It has equal taste. To make it: 2 ripe bananas A quater of one big pumpkin - boil to tender 2 tbsp sugar Approx 1 cup multipurpose flour (depends on the water content of your banana and pumpkin) A pinch of salt Making it: 1. Mash the banana and pumpkin together. 2. Add sugar and flour. Combine. 3. Deep fry one table spoonful of the mix for each scoop till brownish. Turning around consistently. 4. Assalamualaikum... Alhamdulillah ... I finally made the most mentioned about 'Congo Bar'. Every comments that I heard or read saying that it is easy to make. I really wanted to put my hand into it. Finally with Atikah's (my eldest) help, we finally made it. And .... yes! It is so simple to make and very smooth and fast process. Let's do it. Assalamualaikum My Churros I have been longing to try the churros. Alhamdulillah, with Atikah's (my eldest) help, I finally had the opportunity to make it in our home kitchen. The process was pretty simple. With a simple instruction, Atikah managed to do it on her own. Here come the c&p recipe that I used. Its taken from the Allrecipe website. It is such a help. INGREDIENTS: 1 cup water 2 1/2 tablespoons white sugar 1/2 teaspoon salt 2 tablespoons vegetable oil 1 cup all-purpose flour 2 quarts oil for frying 1/2 cup white sugar, or to taste 1 teaspoon ground cinnamon DIRECTIONS: 1. In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball. 2. Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain...

Serabai

Alhamdulillah.... sedapnya dapat makan air tangan mak. Especially when you come back from a day's work and find that it is readily served.  Serabai .... bukan selalu dapat makan serabai ni. Cannot easily find in just any restaurant. In fact I do not know any restaurant that are selling serabai but I am sure there are. Making serabai mak's style requires few tedious steps, however, the outcome is deliciously amazing.... at least to my taste buds. First we need to make the 'tapai', as mak call it, it must be done at least a day earlier. Next, to prepare the batter and let it sit. Then only to cook it. The recipe: This recipe requires 'tapaian nasi' 1 cawan nasi 1 sudu kecil ragi Caranya: Taburkan ragi di atas nasi. Percikkan air ke atas nasi. Home 'mixed' chocolate

Assalamualaikum all, Are you the chocolate lovers? My kids are... It was Shamimi's birthday (Sabrina's friend) and she wanted to give her something that she can make by herself, so, she opted to 'mixing' the chocolate (as I would like to call it).  It's mixing alright as what she did was just melt the chocolate bar using the double boiler technique and later combined it with the different chocolate flavours. First she melted the mint flavour. As I told her not to put too much mint (because Ibu doesn't like it), she merely brushed the mint at the bottom of the mold. Next she melted the dark chocolate and finally the white chocolate. Kakak helped her to pour the chocolate into mold. One thing that I am proud of her is that she cleaned up everything after completing her task. And she is determined to try another combinations and fillings and nuts next time. Wallahua'lam.

Bubur Cha Cha

Assalamualaikum dear readers, Sabrina has frequently asked me to prepare the Bubur Cha Cha. "What? Sabrina eating the Bubur Cha Cha? I thought you said your dear daughter is allergic to coconut milk? How can she eat Bubur Cha Cha? It contains coconut milk." I guess, that might be what some of you will think. Yes, my dear Sabrina is allergic to coconut milk and she still does. Therefore, my version is without the coconut milk. That's the beauty of cooking your own meal because you can substitute and add any ingredients as you like and experiment a new recipe with it. My substitute for the coconut milk of course will be 'MILK' and this time I used the FRESH MILK instead of the usual evaporated milk. Alhamdulillah, everyone likes it including ayah who dislikes FRESH MILK very much. I am not sure how it got its name, as normally Cha Cha refers to a type of dance. Eggless Kek Batik

Assalamualaikum, First, don't forget to answer my Salam. :-) It's the 12th day of Ramadhan 1433. How is everybody doing? How is your tarawih and taddarrus? Sustain .... insyaAllah. I would like to share Sabrina's favourite. Something edible to her only when ibu cooked it. It's the Eggless Kek Batik . The original recipe requires at least an egg, however, specifically for my dear Sabrina, I made some modification by omitting the egg from the recipe, Alhamdulillah it turned out fine. Here is how my eggless kek batik looks like. My ingredients: *1 bar of butter (250gm) - unsalted is preferable *10 table spoon of milo * 3 table spoon of condensed milk 1 packet of biscuit (biskut Marie is preferred) - break into quaters Methods: 1. Put all the * ingredients in a pot. Melt it on the stove. Stir consistently. 2. Once all the ingredients melt, turn off the stove, and add the biscuits, mix well - evenly. 3. Sabrina's Eggless Brownies

Sabrina had always wanted to bake. She spent one night searching for a recipe that she would want to make. And most importantly, it has to be something that she can eat. She found herself something that she had always wanted to taste but cannot do so because she can't take egg. She found the 'Eggless Brownies' recipe. The following day, I let her to explore my kitchen for the ingredients that could make an eggless brownies. Satisfied with all that are available, she began her quest -- making an Eggless Brownies. Ibu just sit back. It has to be fully hers. However, towards the end, she complained that her mixture were too dry. I went to take a look. She complained that the recipe do not has any liquid, therefore, with my 'skillful' mind, I added 1/2 cup fresh milk into the mixture, which immediately make a smooth batter that could easily poured into a pan. Black Glutinous Rice Porridge @ Bubur Pulut Hitam

Salam All, Hakim is really full of ideas this Ramadhan. He came up with various eating desires. It helps me in a way - helps me in deciding what to cook for iftar as I always have problem with that. One evening, we were watching a cooking show on TV and it shows how to make a porridge. I told him that it would taste good to have porridge for iftar. and his response, "Kenapa tak buat bubur yang warna purple? (why not make the purple porridge)". I immediately know what he meant.
