Cucur Carrot

Assalamualaikum, This is my breakfast. It is the 'Cucur Carrot'. Malaysian is famous with CUCUR. With Cucur Udang, Cucur Bilis, Cucur Jagung, and Cucur Kodok@Cekodok. The base for these cucur is the same. It uses the same batter. Only different in its flavor. The batter differs from one cook to another. My base (batter): About 1 cup of water About 3/4 cup of multipurpose flour A pinch of salt to taste 1 large onion sliced thinly The batter must not be too runny nor too thick. If it is too runny, it will trap lots of oil when frying. If it is too thick, it will be hard when cold. Through experience one can get the correct consistency just by looking at it. Some people use the cold water to mix the batter and others use the hot water. But I simply use the plain water. Almost on alternate mornings, I will make the carrot juice or any other fruit juices. Eggless Scones

Ingredients: A cut-n-paste from Anna Olson's   2 cup all-purpose  flour ¼ cup  sugar (I used brown sugar) 1 Tbsp  baking powder ¼ tsp salt (#omitted because I used salted butter) 1 Tbsp finely grated lemon zest ½ cup cool unsalted  butter , cut into small pieces (I used salted butter) ½ cup whipping  cream (I used buttermilk) ¼ cup 2% milk, plus extra for brushing 1 large  egg (#omitted because Sabrina cannot take eggs) 1 tsp  vanilla  extract 1 cup  fresh  or frozen cranberries (#omitted~ sorry, not at home) Directions: 1. Preheat the  oven  to 375 F and line a  baking  tray with parchment paper. 2. Sift the  flour ,  sugar ,  baking powder  and salt into a large bowl. Stir in the lemon zest. Lempeng Nyoq

Assalamualaikum, Peningnya memikir nak masak apa. Rasanya macam masalah sejagat.  I always thought of preparing a week's menu. But it never happen yet. Perhaps one day it will. This is my fast solution for tonight's dinner. Lempeng kelapa @roti nyog @lempeng nyoq @lempeng nyiur. Those are the synonyms. Variety of names referring to one product. 'Nyog' is coconut pronounced in the the northern states of Malaysia. Nyiur or nyior is coconut pronounced in the eastern states of Malaysia. In Bahasa Melayu, we called it 'kelapa'. Lempeng is similar to flat bread but it is a batter rather than a dough. Enough blabbering.  Now with the recipe: I get hold of a small packet of grated coconut about 2 cups. Cucur udang rangup sempoiii.

Assalamualaykum, At times, we have cravings. Cravings to eat certain food, sometimes, it can be any simple food. This is what happen to me, one late afternoon, i crave for Cucur Udang. I crave for the crispy cucur udang but the one I normally make is not the crispy type. Therefore, I put some effort into getting some tips and tricks ... asking friends and Mr Google. And this is the result. I am not sure about others, but it satisfies my cravings. After thorough consideration, I opted to use this recipe, the combination of tips from here and there. Cekodok Pisalabu

Assalamualaikum.... Hari ni nak kongsi something my mom created and I follow ...... Cekodok Pisalabu is actually a combination of " PISA ng + LABU ".... mashed together and becomes cekodok. It is a sweet tooth kuih dan you can enjoy in the morning or evening as you like. When Mak first made it, we were playing the guessing game ... is it a cekodok pisang or cekodok labu .....? It has equal taste. To make it: 2 ripe bananas A quater of one big pumpkin - boil to tender 2 tbsp sugar Approx 1 cup multipurpose flour (depends on the water content of your banana and pumpkin) A pinch of salt Making it: 1. Mash the banana and pumpkin together. 2. Add sugar and flour. Combine. 3. Deep fry one table spoonful of the mix for each scoop till brownish. Turning around consistently. 4. Assalamualaikum... Alhamdulillah ... I finally made the most mentioned about 'Congo Bar'. Every comments that I heard or read saying that it is easy to make. I really wanted to put my hand into it. Finally with Atikah's (my eldest) help, we finally made it. And .... yes! It is so simple to make and very smooth and fast process. Let's do it. Assalamualaikum My Churros I have been longing to try the churros. Alhamdulillah, with Atikah's (my eldest) help, I finally had the opportunity to make it in our home kitchen. The process was pretty simple. With a simple instruction, Atikah managed to do it on her own. Here come the c&p recipe that I used. Its taken from the Allrecipe website. It is such a help. INGREDIENTS: 1 cup water 2 1/2 tablespoons white sugar 1/2 teaspoon salt 2 tablespoons vegetable oil 1 cup all-purpose flour 2 quarts oil for frying 1/2 cup white sugar, or to taste 1 teaspoon ground cinnamon DIRECTIONS: 1. In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball. 2.
