Broccoli soup

Assalamualaikum... Ini Broccoli soup versi 'M'. Apa versi 'M' tu? Versi orang Malas dan nak cepat. Anyway, Alhamdulillah ... it fulfills our appetite needs for dinner. The soup itself is low in carbohydrate, but when you had it with bread, rolls or alike, the carbohydrate appears. Its your choice, how you want to have it. For my daughter, she simply slurped it down just like that. Pretty healthy ;-) My Broccoli Soup Broccoli - washed and cut. grilled and charred slightly in olive oil . Transfer it to a blender, add some plain water or milk, blend it till smooth. In a saucepan, I melt about 1 tablespoon of butter . Add 1 tablespoon of multipurpose flour . Stir quickly to make a roux.  Add heavy cream or whipping cream or simply milk. Stir to dissolve the roux (use whisk). Add the blended creamy broccoli. Add salt and pepper to taste. Assalamualaikum,, A friend of mine was telling about a book that she read, "A day in Prophet Muhammad SAW life". In the book mentioned about Aisya RA prepared Harira for their meals. The name of it sounds interesting that made me start getting more information. My Google just the right place to get this kind of information. Harira is a Morroccan soup. It's filling, and from the recipe I found that it is healthy as well. Morroccan used to prepare this and eat it for the iftar (break the fast) in the month of Ramadhan. Kue Tiao Soup

Salam all, The same question popped up over and over again when the office hour is almost over ... what to cook for tonight. I listened to a motivational talk one day saying that many women wasted their energy unnecessarily by thinking what to cook. But I still believe that we need to really think of what to serve our family especially if that will make them happy and healthy. So, here goes the question: "What's for tonight?". At times I tried to get my husband to solve my problem even though I know that the answer will be a very frustrating one, "Apa-apa je lah". But I still ask, hoping that one day a better answer will be uttered. Asking the kids will more likely receive a very truthful answer. And for last night when given choices between the rice or the kue tiao soup, they eagerly answered "Kue Tiao Soup". This is how my kue tiao soup looks like. To top up the taste, I blended some hot fresh chillies (cili api) and mix it with the dark soya sauce....

Macaroni Soup with Croutons

Salam all, Just trying out the new interface. I'm not sure why, but I dont quite like it. Perhaps it takes more time for me to adapt to the new UI. What worries me most as I failed to update the blog using my new gadget. Anyway, lets share what we had for dinner last night. It's macaroni soup with croutons. Thinking what to cook is always a problem. A quick survey (asking the two kids at home), landed me with the idea of making macaroni soup. And since Hakim likes croutons so much, I decided to serve it with croutons.

Red Mutton Soup

Salam all, Yes, it's mutton soup. Well, it's qurban, there's goat that had been slaughtered, of course there's mutton to cook. My husband decided to make the Red Mutton Soup . It's his recipe. And it is the fisrt time I enjoyed eating mutton. This mutton is different, it does not have the strong 'goaty' taste (for someone who dislike mutton). Probably because it is fresh. The recipe: 1 kg of mutton + its bones 2 cans of tomato soup 1 can of baked beans 2 stalks of celery - cut 6 cherry tomatoes - cut halved 10 button mushrooms - cut into four 1 carrot - diced 3 shallots - sliced 3 cloves of garlic 1 inch of ginger - sliced soup powder (or the bunjut) Cinnamon and star anise 2 table spoon of cooking oil Plenty of water for boiling Salt to taste How to: Fry the onions, garlics, ginger, cinnamon and star anise till fragrant. Chicken Ball 'n Mushroom Soup

Salam all, Another healthy entry from me today. Not to say that other entries are not healthy, they are healthy but probably less healthy. As I normally write, 'Cooking is Simple'. Put everything into the cooking pot and whalla!, it's ready to be eaten. Preparing and cleaning requires a bit of your extra effort --- bab ni yang tak tahan, except if you have a helper. However, sometimes we can make the preparation time shorter by using the ready made ingredients, for instance this Chicken Ball that I purchased, the Ayamas brand. The mushroom , is also readily used. washed it thoroughly, remove the stem and they are ready to be cooked. No mess produced. Next, you need only to prepare some garlic and onion . For a cook, this is just a bliss. Follows will be the cooking steps. With couple of sentences -- dump everything into the pot, add some water , later add salt & paper to taste -- a here you are: You may also add any green leafy vegetables and some carrots ....

Kue Tiao in Prawn Soup

Salam all, Betul ke tak ejaan kue tiao ni? Kira betul je lah kan. This is something that I prepared for dinner. Kadang-kadang tu buntu memikirkan nak masak apa. Melompat-lompat dari satu dapur ke satu dapur, still could not figure out what to cook. Kids do not really like eating rice, especially Hakim. So here it is ...... THE BROCCOLI SOUP The ingredients: The broccoli Onion Whipped Cream Multi purpose flour mixed with some plain water Salt and pepper How to: 1. On a heated pan. saute the onion till tender and brownish 2. Add the chopped broccoli. Once the broccoli is tender, turn off the heat. 3. If your blender can uphold the heat, transfer everything into the blender, add some plain water and blend it until you obtain a smooth texture. 4. Suddenly I felt like I need an extra anti oxidant. And from reading I know that broccoli is a source of this anti oxidant. Normally, broccoli is stir fried in my kitchen, but this time, let's make an innovation for my kitchen. Let's cook broccoli soup. Had it before somewhere, and I liked it. Best nya ...... Finally, I made my own minestrone soup and my family loves it. "Lebih best dari yang selalu kita makan ( It's better than any that we used to eat )", that was the remark from Atikah. Ayah make me promise to save some more for him to eat after the game (he played badminton every Tuesday after Isya'). I am delighted. I know I always fail to follow a recipe exactly. I like to add and remove lots of items from a recipe.
