Day 2 Ramadhan: Asam Pedas Utara and others


Salam all,

On your left is the dish that we had for iftar on the second day of Ramadhan.

From top left, clockwise: the salted Kurau fish, Asam pedas Utara, Omelet, Chicken in black soya sauce (ayam masak kicap), fried kurau.

Center: Spinach special

Very simple menu but really mouth watering especially with the salted kurau there.

I did not plan to cook much on 2nd day of Ramadhan. Ayah planned to go to surau for iftar with Hakim (he said that it's going to be a month event). When there's only Sabrina and me, the Ayam Masak Kicap is good enough. At almost 5.30pm, he suddenly changed his mind and decided that even with pizza is better if we had it at home, which indicates that he wanted to have the iftar at home. Digging into my fridge for a fast and easy dish, I decided that it's going to be the Asam Pedas, northern style.


Ingredients:
3-4 red chillis*
1 red onion*
3-4 garlic*
5g anchovies
Fish (any)
Tamarind juice
Daun Kesum
1 inch belacan
salt to taste

How to:
1. Blend all the * labelled ingredients and put in a pot for cooking.
2. Put in the anchovies, fish, belacan and daun kesum. Let it simmer for a while.
3. Next, put in the tamarind juice and once boil, put in the fish and salt. Let it simmer.
4. Ready to be served.

Nasi goreng ringkas

Assalamualaykum Rushing from office to our home. Need a quick fix for the dinner?  Fried rice is the simple answer. A scenario. You came home late. Rushing from the office and decided not to cook.  Both the husband and you had not had a hefty meal for lunch earlier. Therefore you opted to eat out at a Malay restaurant. What would you order? Fried rice? Well, why not make it yourself?  Use all the available ingredients and kitchen tools. How I made mine? The rice: Entering the house, I placed my things near the counter. I quickly walked to the kitchen. 1 cup of rice is sufficient for the two of us. Washed and rinsed it, I cooked it in a Noxxa pressure cooker for 7 minutes. At times, I cooked using the Tupperware rice cooker (cooked in the microwave) for 15 minutes. Cheese Cake

Tak sangka sungguh nak buat cheese cake ni. It came from K.Yan. She was telling how Sarah made cheese cake at Mak Long's house, and it excites me. I decided to make one. Luckily, hubby is so supportive to assist me in finding the ingredients (even though he doesnt like cheese). The ingredient: Philadelphia Cream Cheese Digestive Biscuit (for the base) Butter (leave at room temperature) 2 eggs Whipping cream Evaporated Milk to taste. (no exact measurement was given, as k.yan practically taste it before baking ;-)) Steps: 1. Blend the biscuits into crumbs. 2. Mix it with butter. Just enough butter is required to wet the biscuit. 3. Press onto a baking tray to form a base for the cheese cake. 4. Whip the cream cheese in the mixer till doubled. 5. Add whip cream, evaporated milk and eggs. 6. Pour onto the base. Bake in the oven. But .... as my microwave was malfunctioning, we opt to steam it and the result was superb and in fact better (according to kak yan la ...).
