(1) Focacia and (2) Harira : the Noxxa way

Assalamualaikum,,

A friend of mine was telling about a book that she read, "A day in Prophet Muhammad SAW life". In the book mentioned about Aisya RA prepared Harira for their meals. The name of it sounds interesting that made me start getting more information. My Google just the right place to get this kind of information.

Harira is a Morroccan soup. It's filling, and from the recipe I found that it is healthy as well. Morroccan used to prepare this and eat it for the iftar (break the fast) in the month of Ramadhan.

These are the ingredients:
2 tomato - blended
1 onion - diced
A handful of  parsley and coriander - chopped
1 celery stalk - diced
Salt, pepper, ginger powder (I used the fresh ginger) - to your taste
2 tbsp tomato paste
3 cups plain water
1 tbsp butter
A handful of vermicelli - broken to about 1 inch
A bowl of chickpeas/ lentils - pre-boiled

1 tbsp multipurpose flour
1/2 cup plain water

The Noxxa way:
  1. Set the Noxxa Pressure Cooker (NPC) to Stir Fry (SF).
  2. Put the butter in the heated pot.
  3. Add onion. Fry till slightly tender.
  4. Add parsley, coriander and celery. Mix well.
  5. Add the blended tomato.
  6. Add in the salt, pepper, ginger. Mix well and later add water.
  7. Turn off the SF. Set the NPC to pressure for 25minutes.
  8. After 25 minutes. Remove the steam by turning the know to steam.
  9. Open the lid. Add in the chickpeas/ lentils/ vermicelli.
  10. Add the flour mixture. Stir well.
  11. If you need to make it thicker. Set the NPC to SF and cook till to correct consistency.
Ready for serving.

Kebab

Good morning!!!! Let's make a different today. (At least for my kitchen). Done with cereals, nasi lemak, lempeng or mee goreng, lets have something different this morning. Considering the kids only had something light for their dinner last nite, I resort to making an instant kebab!! Mmmm .... Amacam? Terliur tak? Well, very easy to prepare. I used all the instant ingredients. Onion - diced Ayamas Chicken burger - suitable for grilling, defrost and sliced (do not take too long to defrost it as it is difficult to slice it later) Olive - sliced Tomato - diced Olive oil Oppss... don't forget the bread - I use Gardenia's rolls. 1. Heat the pan with olive oil. 2. Fry the sliced chicken burger till cooked. 3. Add onion, tomato and olive. 4. Add seasonings - salt & pepper. 5. Cut the roll in the center vertically, but do not separate it. Apply butter onto it. 4. Toast it over the burning stove for a while (to replace charcoal burn). 5. Stuffed the chicken burger. 6. Garnish wit...

Nasi goreng ringkas

Assalamualaykum Rushing from office to our home. Need a quick fix for the dinner?  Fried rice is the simple answer. A scenario. You came home late. Rushing from the office and decided not to cook.  Both the husband and you had not had a hefty meal for lunch earlier. Therefore you opted to eat out at a Malay restaurant. What would you order? Fried rice? Well, why not make it yourself?  Use all the available ingredients and kitchen tools. How I made mine? The rice: Entering the house, I placed my things near the counter. I quickly walked to the kitchen. 1 cup of rice is sufficient for the two of us. Washed and rinsed it, I cooked it in a Noxxa pressure cooker for 7 minutes. At times, I cooked using the Tupperware rice cooker (cooked in the microwave) for 15 minutes. Meanwhile, I get the ingredients ready for my fried rice. 1 onion 3 garlics 1 handful of anchovies 2 red chillies Throw everything into the blender and blend it fin...

Cheese Cake

Tak sangka sungguh nak buat cheese cake ni. It came from K.Yan. She was telling how Sarah made cheese cake at Mak Long's house, and it excites me. I decided to make one. Luckily, hubby is so supportive to assist me in finding the ingredients (even though he doesnt like cheese). The ingredient: Philadelphia Cream Cheese Digestive Biscuit (for the base) Butter (leave at room temperature) 2 eggs Whipping cream Evaporated Milk to taste. (no exact measurement was given, as k.yan practically taste it before baking ;-)) Steps: 1. Blend the biscuits into crumbs. 2. Mix it with butter. Just enough butter is required to wet the biscuit. 3. Press onto a baking tray to form a base for the cheese cake. 4. Whip the cream cheese in the mixer till doubled. 5. Add whip cream, evaporated milk and eggs. 6. Pour onto the base. Bake in the oven. But .... as my microwave was malfunctioning, we opt to steam it and the result was superb and in fact better (according to kak yan la ...).
