Briyani Rice Hentam Sajalah

Assalamualaikum

I wanted to prepare Nasi Briyani for Iftar the other day, but we did not have any Briyani Spices at home. Added with the laziness to step out of the house especially in this Movement Control Order season, I need to quickly think for some option.

My solution is to mix my own spices for briyani. Hoping for it to work. And .... yesss, it works, Alhamdulillah.





The ingredients for the rice:

3 cups of Basmathi rice - washed and drained
Chicken - cut and washed
*2 tablespoon kurma powder
*1 tablespoon chicken curry powder
*mixed both, add some water to form a thick paste

**1 large onion
** 2 cloves of garlic
** 1/2 inch of ginger
**Blend all ingredients

1/4 cup evaporated milk
Salt for seasoning
some Saffron to end it
Enough water

For frying : 
shallot, 
cinnamon stick, star anise and clove, 
1 piece of pandan leave
Ghee


Method:
  1. In a hot pot, heat the ghee (or cooking oil or you can add both ghee and cooking oil), about 2 tablespoon of it. As I am using Noxxa, i used the stir fry function to cook all this.
  2. Fry the frying ingredients till fragrant. Add the blended items (**).
  3. Add the paste. Let it cook.
  4. Add chicken. Let it simmer and you will see the liquid is coming out from the chicken.
  5. When the chicken is 3/4 cooked, add the rice. Mix it well with the ingredients.
  6. Add enough water and the evaporated milk.
  7. Season it with salt.
  8. For Noxxa users, put the lid on and change the setting from stir fry to pressure cooking method. Let it cook for 6 minutes.
  9. Once done, remove the lid when it is safe, add the saffron.
  10. Close the lid and it cool down.
And that's it.You are done and your rice is ready to be eaten.

Tips: I normally measure my rice grains and water with the ratio 3:4 or 2:3 ... that is one extra cup of water for each cup of rice grains.

Nasi goreng ringkas

Assalamualaykum Rushing from office to our home. Need a quick fix for the dinner?  Fried rice is the simple answer. A scenario. You came home late. Rushing from the office and decided not to cook.  Both the husband and you had not had a hefty meal for lunch earlier. Therefore you opted to eat out at a Malay restaurant. What would you order? Masak lemak Daun Kaduk

Assalamualaikum Pokok kaduk tumbuh membiak di sekitar rumahku dengan suburnya. Adakalanya terpaksa dicantas buang kerana telah menyesakkan pandangan. Tertanya-tanya juga apa lagi yang boleh dibuat dengan daun kaduk ni. Kata pepatah, "Malu bertanya sesat jalan". Dalam bersembang-sembang bersama rakan sepejabat mengenai pokok-pokok herba ni, beliau mencadangkan untuk buat masak lemak daun kaduk, Sedap, katanya. Well, why not? Inilah hasilnya. Caranya: Balik dari pejabat, aku memetik beberapa helai daun kaduk (sebab ini peringkat percubaan makanya tak boleh masak banyak, bimbang jadi pembaziran pulak).
