Eggless Scones

Ingredients: A cut-n-paste from Anna Olson's   2 cup all-purpose  flour ¼ cup  sugar (I used brown sugar) 1 Tbsp  baking powder ¼ tsp salt (#omitted because I used salted butter) 1 Tbsp finely grated lemon zest ½ cup cool unsalted  butter , cut into small pieces (I used salted butter) ½ cup whipping  cream (I used buttermilk) ¼ cup 2% milk, plus extra for brushing 1 large  egg (#omitted because Sabrina cannot take eggs) 1 tsp  vanilla  extract 1 cup  fresh  or frozen cranberries (#omitted~ sorry, not at home) Directions: 1. Preheat the  oven  to 375 F and line a  baking  tray with parchment paper. 2. Sift the  flour ,  sugar ,  baking powder  and salt into a large bowl. Stir in the lemon zest. Healthy Oat Muffin

The ingredients: (Laura Vitale) Dry Ingredients (A) 1 cup rolled oats 1 cup jumbo oats  (* I used 2 cups of rolled oats) 1 1/2 cups multipurpose flour 1/2 cup brown sugar 1/2 cup coarse sugar  (*I only use brown sugar for about 1 3/4 cup) 1 1/2 tsp soda bicarbonate 2 tsp cinnamon powder 150g chopped dates (I did not measure) Wet Ingredients 1 egg (preferably large) 2 cups plain yoghurt/ buttermilk 1 cup canola oil 1 tsp vanilla essence ***1/3 cup boiling water Method Mix all the dry ingredients together. Put aside. In another bowl, mix all the wet ingredients, except the boiling water. Mix the two ingredients together to form a batter. Add the boiling water to soak the oats. Let it stay for about 20 minutes before filling into the muffin tray. Bake at 180 celcius for about 20 minutes or till cooked. Alhamdulillah. It's delicious and healthy. Cekodok Pisalabu

Assalamualaikum.... Hari ni nak kongsi something my mom created and I follow ...... Cekodok Pisalabu is actually a combination of " PISA ng + LABU ".... mashed together and becomes cekodok. It is a sweet tooth kuih dan you can enjoy in the morning or evening as you like. When Mak first made it, we were playing the guessing game ... is it a cekodok pisang or cekodok labu .....? It has equal taste. To make it: 2 ripe bananas A quater of one big pumpkin - boil to tender 2 tbsp sugar Approx 1 cup multipurpose flour (depends on the water content of your banana and pumpkin) A pinch of salt Making it: 1. Mash the banana and pumpkin together. 2. Add sugar and flour. Combine. 3. Deep fry one table spoonful of the mix for each scoop till brownish. Turning around consistently. 4. Meehoon Sempoi

Assalamualaikum.... Anak tekak dan selera ni memang menghairankan. Ada kalanya kita 'crave', nak sangat-sangat makan sesuatu. Dan kadang-kadang pula kita 'really dislike' makanan tersebut. Dan bila selera terbuka, selera menghubungkannya dengan otak yang seterusnya menggerakkan kakitangan sehinggakan dalam keadaan letihpun kita masih manpu menyiapkan juadah yang diidam (only applies if we know how to make it). Aku teringin makan meehoon. Hari dah malam. Aku buka petiais in searching for anything to add to the flavor..... there's only chicken. Well..... chicken will do. My ultimate is 'makan meehoon'. Bahan2: 1/2 paket meehoon (direndam) 1 bawang besar 3 ulas bawang putih 1 sudu besar cili kisar Isi ayam Tomato sos (secukup rasa) Garam gula (secukup rasa) Cara: 1. Serabai

Alhamdulillah.... sedapnya dapat makan air tangan mak. Especially when you come back from a day's work and find that it is readily served.  Serabai .... bukan selalu dapat makan serabai ni. Cannot easily find in just any restaurant. In fact I do not know any restaurant that are selling serabai but I am sure there are. Making serabai mak's style requires few tedious steps, however, the outcome is deliciously amazing.... at least to my taste buds. First we need to make the 'tapai', as mak call it, it must be done at least a day earlier. Next, to prepare the batter and let it sit. Then only to cook it. The recipe: This recipe requires 'tapaian nasi' 1 cawan nasi 1 sudu kecil ragi Caranya: Taburkan ragi di atas nasi. Percikkan air ke atas nasi. Masukkan dalam bekas kedap udara dan biarkan proses penapaian berlaku selama 1 malam (24 jam ). Bahan serabai: 2 1/2 cawan tepung beras 1/2 cawan tepung gandum 2 cawan santan pekat 1/2 bancuh...

Eggless Corn Pancake

Assalamualaikum dear readers, Yes, I know it has been ages since my last update. Well, my usual lame excuse, BUSY. But .... don't get me wrong, this does not mean that I have not been cooking, I do and I did. It's just that I cannot find time to snap a photo of what I cooked and what more to update this blog!! I'm doing it now ...... I made pancake for tea today!!!! With ayah and Hakim off to a feast (kenduri), its only Sabrina and ibu to enjoy it. A simple dish with simple and fast preparation, it only took me less than 30 minutes to get it all done. Ingredients: 1 stalk of fresh corn (grated) 2 cups of milk 1 cup of self raising flour 1 table spoon sugar pinch of salt 1 tablespoon olive oil Method: Whisk everything in a bowl till blend. Heat a non-stick pan. Spoon a mixture onto the pan. Once you see bubble on one side, turn the pancake around. Cook till golden in colour. You may eat it with jem, syrup,  or honey. Bon apetite.

Mee Goreng Ibu

Salam all, Thinking about what's for dinner is always not my favorite things to do. Especially when eating out is not an option. On one wonderful Sunday I opt for a mee (yellow noodle) goreng. Since I prepared it, I called it ' Mee Goreng Ibu' nothing resembles the famous Mee Goreng Mamak . Mee Goreng Ibu The Ingredients: Yellow noodle 1 packet Minced meat Prawns 2 tablespoon of chilli paste 2 tablespoon of tomato ketchup 2 tablespoon of dark soy sauce Vegies salt to taste shallots and garlic cooking oil Tauhu and basil - for garnishing (add taste too) My method : Fry the shallots and garlic in 2 tablespoon cooking oil till fragrant or brownish Add the minced meat, chilli paste, tomato ketchup and dark soy sauce. You may add some water to let the meat tender Add the prawns (I add it later because I dont want it to be over cooked) Add salt and sugar to taste Add vegies and the yellow noodles. Mixed well. Creamy Chicken Pie

Salam all, This is a pre-Ramadhan cooking. Just trying out few new recipes, to check whether my kids like it or not. If they do, I can definitely make it again during Ramadhan. In other word I am trying to create varieties to my cooking, especially during Ramadhan. My chicken pie normally uses the pie crust recipe with chicken curry and vege as filling. But last Sunday, I tried something different. Actually, I got the recipe from a recipe book sent to me from Naturel cooking oil, as a birthday gift. They'll send me something every year, without fail. Wonder how I got it? Well, years ago I submitted some competition conducted by Naturel but fail to win any prizes. Based on that address and some personal info that they got from the application, every year, they will send me something as a birthday wish, and this year is the recipe book -- Ok jugak kan .....
