Roasted Chicken and vegeies

Assalamualaykum, I roasted two chickens yesterday, and I have few pieces left. Enough for the two of us (Mr Hubby and me). To add flavour to it, I prepared some vegeies to go with it. I reheat the chicken on a grill... (not too long as it will take the moisture away). At the same time prepared the grilled vegeies. I had some carrots, celery, tomatoes and broccoli. All are washed and cut. Spread some olive oil on the griller, place the vegeies, sprinkle more olive oil over it. Also sprinkle some salt and pepper. Turn them for an even cook.  Caution: Tomatoes are very tender. Do not flip it too often. Only once for each side. And its cook pretty fast too. I really love the charred tomatoes with salt and pepper. I can have plenty of it just like that. To top all these, I had the saute shitake mushroom too. Simple slice the onion and mushrooms. Saute the onion till tender. Then add the mushroom. Sprinkle some salt and pepper. Saute till tender. This is also good...

Chicken: Pressured with Noxxa; Roasted with convec oven.

Assalamualaikum, Today, I would like to share a recipe which is very fast (but not furious) ... of course with the correct gadget. Total preparation and cooking time is approximately 1 hour. From the bathing process for the chicken, powdered, massaged, scrubbed, pressurized and roasted. 1 hour for a roasted chicken?... I would say, it's fast. I had some stuffing into the hollow chicken which adds the flavour to the chicken. Here goes my ingredients: For the chicken 1 whole chicken - remove all the internal organs Salt & pepper 2 inches butter Oregano and Mix herb spices Preparation: Bathing process means cleaning the chicken from any excessive fats and blood clot. Powdered the chicken with some multipurpose flour to remove any unwanted ordour. Next is massaging the chicken with some butter throughout the body, underneath the skin ( I learnt this from a Youtube). Finally, scrubbing the chicken with salt and pepper, oregano and mixed herbs...

Assalamualaikum... Here I am again....Alhamdulillah the highest gratitude to the Most Merciful Allah. Hari ni nak berkongsi hasil tanganku, yang pertama kali dimasak. First time in my kitchen. The idea to cook this came when a friend of mine, sis Zarina Zainol distributed her homegrown 'bunga kantan'. Bunga kantan is quite expensive nowadays pricing ata RM3 per bud at average. Buttered Chicken

Assalamualaykum all, Hari ni nak share resipi suatu hari yang sangat malas... It was Saturday, I was not feeling very well. Mr Hubby is out for kenduri, meaning that he will not be home for lunch. It was just me and Atikah. I wondered what to have for lunch. The chicken was already thawed, but I still hasn't have any idea .... Arhg.... Aha! I will the easiest of it. I am going to give a good butter massage to the chicken , rub in salt , pepper , McCormick Mixed Herbs and some oregano . Left it for about 5 minutes while reheating the the airfryer. I lay the aluminium foil on the fryer basket. Placed the chicken and get it cooked for about 25 minutes in 180 degree temperature. Once cooked, I squeezed the fresh lemon . Alhamdulillah... it turns out to be very delicious. When Atikah asked whats the name of the dish ....??? .... what should I call it? I called it 'Buttered Chicken'. The idea to rub the chicken with butter because frying with airfr...

Bergedil ayam daun cekur

Assalamualaikum, Terasa macam nak makan bergedil. Kalau makan di kedai makan/ restoran, harganya boleh tahan mahalnya. Yup... the making may not sound so simple. It requires few steps. But the results... insha Allah ... satisfying. Chicken breast is not a favourite in the house. Nobody would want to eat the most healthiest part of the chicken (to me .. hihihi). Most of the time, the chicken breast will turn to be used as condimetns in fried rice, mee or kuetiao, or even for spaghetti sauce. Making 'bergedil' out of the chicken breast is a good solution. I dug my fridge, trying to find enough ingredients to make 'bergedil' ... one item is missing ... the cilantro. Cilantro will give flavors to the 'bergedil'. My cognitive skills quickly recommended another flavor --- the Cekur. And went to my tiny herb garden and dug some cekur out of a pot. Cekur or some people may call it kenchur is from the ginger family. The scientific name for it is ...

Chicken Madras

Assalamualaikum all, Don't ask me how the recipe got it name.  I do not know. I am sorry if people from Madras says that they have never encounter such a dish in Madras before. Perhaps because it uses many curry leaves, therefore it is called as such. It is a passed down from my husband's aunty who is a great caterer in Sg Petani, Mak Nun. She made it for one of the wedding ceremony, I like it and asked her to teach me how to cook this. It's pretty simple and can be considered as a fast cooking meal - provided that you have all the ingredients ready, like I always did. The ingredients 1/2 Chicken - cut into 8, washed and marinate with salt and turmeric powder 2 large onions - diced finely (using a blender is not adviceable as it will result with a too watery dish) 4 tbs chilli paste Tamarind juice 1 handful of curry leaves Salt to taste Cooking oil. It does not require too many ingredients. All are almost readily available in most kitchen except for ...

Pot Roast Chicken

Assalamualaikum all, Selamat Hari Raya. Enjoy your eid festive? Alhamdulillah .... Enjoy the food? Alhamdulillah. Today, I would like to share my success story. The story of the Pot Roast Chicken . Can you see the roasted chicken? It looks burnt, but its not. Its the honey that I poured on it that is burnt. The taste is marvelous. I even got a request to have it again from my husband. This was my second attempt (as an amateur). My first try with the oven was not so successful. The chicken was overcooked and became very dry and hard even though its not burnt. Therefore, this time I took all the precautionary action and seek some tips from the expert. I got the tips from my friend, Rose Hafsah, who is an active cook, who cooks for her eight children and a husband everyday. Wow! I salute!!! She told me to use the Pot Roast technique. According to her, this will able to preserve the moist of the chicken leaving it very tender and juicy when cooked. With her technique, I pre-cooked a marin...

Buttermilk Fried Chicken

These are the food that reached my dinner table and plate last night. As mentioned in my other blog , I really went home and made buttermilk fried chicken to be eaten with mushroom soup, salad but no croutons. Croutons were replaced with the garlic toast. I planned to make croutons earlier but change it last minute due to time constraint. On the plate, you can see the fried chicken, apple 'n potato salad, sliced banana and the chilli sauce. I got the idea to make the buttermilk from watching my 'now' favourite show, ' Chef at Home '. With his simple tagline - Cooking Without Recipe, I just love this show. I tried my best not to miss it if possible. If you missed it, you can still go to the chef's website, Michael Smith . The secret behind this dish is the marinating process. It's just like making the 'Ayam Salut Tepung' but marinating the chicken with the buttermilk somehow gives a different taste which is lovely. Here's how it goes: ...

Chicken Black Pepper

Aha! Cooking again. Alhamdulillah, I am finally cooking again in my home sweet home, in my newly uplift kitchen. Alhamdulillah again. Last Sunday(15th August 2010) was my first day doing a 'real' cooking for the family, especially for the berbuka. Since moving back into the house, there are so many things happened. Moved back-in in a flash, kenduri, I fell sick for almost 2 weeks (as usual, especially when I am very tired), went to Dungun for the Programming and Multimedia Competition, and followed by taking care of Sabrina who was admitted to a medical center. Fuhhh! What a hapenings. Sabrina was discharged on Friday (13th August), not enough time for cooking, Saturday, the cabinet team was busy installing the kitchen cabinet (stove off again...), only Sunday I started a 'real' cooking for the break fast. But, chicken black pepper wasn't the menu for Sunday (I forgot what I cooked that day, getting old already - hey! its my birthday today, memang da...
