Assalamualaikum I wanted to prepare Nasi Briyani for Iftar the other day, but we did not have any Briyani Spices at home. Added with the laziness to step out of the house especially in this Movement Control Order season, I need to quickly think for some option. My solution is to mix my own spices for briyani. Hoping for it to work. And .... yesss, it works, Alhamdulillah. The ingredients for the rice: 3 cups of Basmathi rice - washed and drained Chicken - cut and washed *2 tablespoon kurma powder *1 tablespoon chicken curry powder *mixed both, add some water to form a thick paste **1 large onion ** 2 cloves of garlic ** 1/2 inch of ginger **Blend all ingredients 1/4 cup evaporated milk Salt for seasoning some Saffron to end it Enough water For frying :  shallot,  cinnamon stick, star anise and clove,  1 piece of pandan leave Ghee Method: In a hot pot, heat the ghee (or cooking oil or you can add both ghee and cooking oil), about 2 tablespoon of it. As I am using Noxxa, i ...

Nasi goreng ringkas

Assalamualaykum Rushing from office to our home. Need a quick fix for the dinner?  Fried rice is the simple answer. A scenario. You came home late. Rushing from the office and decided not to cook.  Both the husband and you had not had a hefty meal for lunch earlier. Therefore you opted to eat out at a Malay restaurant. What would you order? Fried rice? Well, why not make it yourself?  Use all the available ingredients and kitchen tools. How I made mine? The rice: Entering the house, I placed my things near the counter. I quickly walked to the kitchen. 1 cup of rice is sufficient for the two of us. Washed and rinsed it, I cooked it in a Noxxa pressure cooker for 7 minutes. At times, I cooked using the Tupperware rice cooker (cooked in the microwave) for 15 minutes. Meanwhile, I get the ingredients ready for my fried rice. 1 onion 3 garlics 1 handful of anchovies 2 red chillies Throw everything into the blender and blend it fin...

Assalamualaikum, Coming back from a tiring office hours would call for snap and simple dish. This is what I made for dinner on one evening. Make sure the rice is cooled. 2. Fry the onion and garlic till tender. 3. Add chicken. Fry till cooked. Put a little bit of water to scrape the chicken from the wok. 4. Add carrot and celery. Fry lightly. 5. Add seasonings. 6. Add rice. Mix well. 7. Make a whole in the center and put a beaten egg. Let it harden a...

Bento: Plain Fried Rice

Assalamualaykum, Breakfast? Lunch? Brunch? Brunch is the new term coined  when people starts combining their breakfast and lunch together. it is definitely not a healthy living. Breakfast is the most important meal of the day. Never skip your breakfast for a healthy living. Plus ..... take a healthy breakfast; not the nasi lemak and roti canai; our favourite.  ;-p This is my breakfast. Plain fried rice with some sauteed mushroom. Extras.... I have it for lunch as well. It saves me from going out. It saves me from eating out. It saves my money as well. Eating home cooked food is always the best. But.....bento is not my everyday event. Only will do it if I have the will and energy to get busy in the kitchen at the wee hours in the morning. This plain fried rice is extremely simple. And its our (my husband and me) favourite's. To make it, you only need : 1 bowl of cooked rice - cooled 1 egg 2 dried chillis - just break it into coarse pieces Any veg...
