Kerabu Kobis (Cabbage salad)

 Assalamualaikum ..... Hello there! Anybody at home??? I has been too quiet, tooooooo quiet for sooo lonnnnnng. I smiled when seeing that there was only one posting in the year 2020. Each beginning of the year, I promise myself to be an active writer or blogger ... but never gets fulfilled. Too busy? Too lazy? Well it can be for many reasons. So .... let's mark an entry for 2021, and see if many more to follow. This is a pretty simple recipe to make. The only effort. required here is to thinly sliced the white cabbage. This three ingredients salad is nice to have with rice or on sandwiches (you can strain it after a while). The ingredients: Pieces of white cabbage - soak in a plain water for about 30 minutes. This will make it crispier. The thinly slice it. 1 large Onion and red chillies - also thinly sliced. Put everything in a bowl. Season it with vinegar (any kind will do), salt and sugar. Balance the taste. Mix well. Refrigerate it for few minutes.  Here you go ... a tasty...

Cucur Carrot

Assalamualaikum, This is my breakfast. It is the 'Cucur Carrot'. Malaysian is famous with CUCUR. With Cucur Udang, Cucur Bilis, Cucur Jagung, and Cucur Kodok@Cekodok. The base for these cucur is the same. It uses the same batter. Only different in its flavor. The batter differs from one cook to another. My base (batter): About 1 cup of water About 3/4 cup of multipurpose flour A pinch of salt to taste 1 large onion sliced thinly The batter must not be too runny nor too thick. If it is too runny, it will trap lots of oil when frying. If it is too thick, it will be hard when cold. Through experience one can get the correct consistency just by looking at it. Some people use the cold water to mix the batter and others use the hot water. But I simply use the plain water. Almost on alternate mornings, I will make the carrot juice or any other fruit juices. Broccoli soup

Assalamualaikum... Ini Broccoli soup versi 'M'. Apa versi 'M' tu? Versi orang Malas dan nak cepat. Anyway, Alhamdulillah ... it fulfills our appetite needs for dinner. The soup itself is low in carbohydrate, but when you had it with bread, rolls or alike, the carbohydrate appears. Its your choice, how you want to have it. For my daughter, she simply slurped it down just like that. Pretty healthy ;-) My Broccoli Soup Broccoli - washed and cut. grilled and charred slightly in olive oil . Transfer it to a blender, add some plain water or milk, blend it till smooth. In a saucepan, I melt about 1 tablespoon of butter . Add 1 tablespoon of multipurpose flour . Stir quickly to make a roux.  Add heavy cream or whipping cream or simply milk. Stir to dissolve the roux (use whisk). Add the blended creamy broccoli. Add salt and pepper to taste. Bento: Plain Fried Rice

Assalamualaykum, Breakfast? Lunch? Brunch? Brunch is the new term coined  when people starts combining their breakfast and lunch together. it is definitely not a healthy living. Breakfast is the most important meal of the day. Never skip your breakfast for a healthy living. Plus ..... take a healthy breakfast; not the nasi lemak and roti canai; our favourite.  ;-p This is my breakfast. Plain fried rice with some sauteed mushroom. Extras.... I have it for lunch as well. It saves me from going out. It saves me from eating out. It saves my money as well. Eating home cooked food is always the best. But.....bento is not my everyday event. Only will do it if I have the will and energy to get busy in the kitchen at the wee hours in the morning. This plain fried rice is extremely simple. And its our (my husband and me) favourite's. To make it, you only need : 1 bowl of cooked rice - cooled 1 egg 2 dried chillis - just break it into coarse pieces Any veg...

Healthy Oat Muffin

The ingredients: (Laura Vitale) Dry Ingredients (A) 1 cup rolled oats 1 cup jumbo oats  (* I used 2 cups of rolled oats) 1 1/2 cups multipurpose flour 1/2 cup brown sugar 1/2 cup coarse sugar  (*I only use brown sugar for about 1 3/4 cup) 1 1/2 tsp soda bicarbonate 2 tsp cinnamon powder 150g chopped dates (I did not measure) Wet Ingredients 1 egg (preferably large) 2 cups plain yoghurt/ buttermilk 1 cup canola oil 1 tsp vanilla essence ***1/3 cup boiling water Method Mix all the dry ingredients together. Put aside. In another bowl, mix all the wet ingredients, except the boiling water. Mix the two ingredients together to form a batter. Add the boiling water to soak the oats. Let it stay for about 20 minutes before filling into the muffin tray. Bake at 180 celcius for about 20 minutes or till cooked. Alhamdulillah. It's delicious and healthy. Overnight Oats

Assalamualaikum... Whta's for breakfast? Lunch? Dinner? I recently came across this interesting healthy eating. Overnight Oats. The name came by because you can prepare it during the night. Let it stay in the fridge for the night or two or three and grab it when you feel like eating it. You can make a variety of flavour out of it too. The basic ingredients are really basic: 2 cups of oats (not instant oats - it reduced the health benefits) 3 table spoon of yogurt 2 cups or 1 1/2 cups of fresh milk (These are MY simple ingredients, you can find plenty on the net) Mix everything together and scoop into a jar with lid.  Store overnight. For the varieties: You can add honey or maple syrup for sweetness. Or you can just rely the sweetness from the fruit added to it - berries, banana, mango etc. You can add your fruits when preparing it.  Or you may add it up later whenever you are ready to it. Bergedil ayam daun cekur

Assalamualaikum, Terasa macam nak makan bergedil. Kalau makan di kedai makan/ restoran, harganya boleh tahan mahalnya. Yup... the making may not sound so simple. It requires few steps. But the results... insha Allah ... satisfying. Chicken breast is not a favourite in the house. Nobody would want to eat the most healthiest part of the chicken (to me .. hihihi). Most of the time, the chicken breast will turn to be used as condimetns in fried rice, mee or kuetiao, or even for spaghetti sauce. Making 'bergedil' out of the chicken breast is a good solution. I dug my fridge, trying to find enough ingredients to make 'bergedil' ... one item is missing ... the cilantro. Cilantro will give flavors to the 'bergedil'. My cognitive skills quickly recommended another flavor --- the Cekur. And went to my tiny herb garden and dug some cekur out of a pot. Here comes Churros...

Assalamualaikum My Churros I have been longing to try the churros. Alhamdulillah, with Atikah's (my eldest) help, I finally had the opportunity to make it in our home kitchen. The process was pretty simple. With a simple instruction, Atikah managed to do it on her own. Here come the c&p recipe that I used. Its taken from the Allrecipe website. It is such a help. INGREDIENTS: 1 cup water 2 1/2 tablespoons white sugar 1/2 teaspoon salt 2 tablespoons vegetable oil 1 cup all-purpose flour 2 quarts oil for frying 1/2 cup white sugar, or to taste 1 teaspoon ground cinnamon DIRECTIONS: 1. In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball. 2. Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain...

Ready to go breakfast: Omellete and Baked beans

Assalamulaikum all, At times we are too busy to prepare a breakfast (it is ALWAYS for me) .... but do not feel like having a breakfast outside the house. A fast and simple solution is to bash some eggs into something edible, tasty and healthy. The omellete could just be the answer. My ready to go breakfast With 2 eggs, 1 diced tomato, 1 diced button mushroom, a slice of diced capsicum, 2 table spoon of fresh milk, salt and pepper will do just fine with my husband's appetite. You may add cheese if your are fond of it. But not in my case. Heat the small pan while you mix everything together. Melt a table spoon of butter. Than pour the mixture into the heated melted butter. Let it spread evenly onto the small pan, as it started to hardened, use the spatula to roll the egg to the side on the pan gently. And serve. I like to have my omellete with baked beans .... you can pair it with others ..... bon appetite ..... Wallahualam.

Assalamualaikum ... Suddenly I'm craving for coconut pancake on this rainy and cold evening. But I have limited opened stock of multipurpose flour and plenty of wholemeal flour. And the rain showered my herbs garden give life to my chives in the pot. Sound like a good combination to me ....Therefore, let's make an innovation. Pratha Wraps

Assalamualaykum,, Hrmm...  sekali sekala tukar selera sedap jugak, asyik-asyik makan nasi saja ... (tapi rasanya selalu jugak tukar seleara ni). Sebelum balik kerja, singgah dulu di dapur-dapur orang famous ... my frequent visits will be to Cik Mat Gebu ,   Diana's Sky Blue Kitchen (Love the photos there), MamaFami 's ... to name a few. Bila singah-singgah kat dapur orangni, memberikan sedikit inspirasi untuk memasak. On one fine evening, I happened to drop by at Diana's whom talked about this Pratha Wrap. It seems that (from her blog), she took the idea from Cik Mat Gebu, I was definitely attracted to it. It looks deliciously yummy. Purple cabbage pancake.

Salam alaykum. Ni gara-gara cabaran kawan-kawan untuk menguruskan badan. To take up the challenge I gradually reduce my rice intake. I have not reach the level where I can live only on fruits and soups. Therefore I created this filling, but still carbor diet however less starch as compared to potato or rice. The ingredients: 1 cup of general purpose flour 1 egg beaten Thinly sliced cabbage Half cup of fresh milk Salt to taste. Add all the ingredients together to form a batter. If the batter is too thick, add water to it. Laddle the batter and pour onto the pan. Let it turn golden brown and flip the other side till also golden brown. You may choose to it either with syrup, honey or the sambal bilis. My Malay taste preferred the spicy sambal bilis. Bon appetite.

Pizza o Pizza

Salam alaykum. Pizza anyone? This is the instant version with the ready made ingredients. This was an overdue post. A group of Sabrina's friend came over for a short break from school on one Friday afternoon. Each brought their own lunch pack from school so I need not prepare them anything. But, be it children or adult, they are still the guest of our house. And guest must be treated accordingly as prescribed by Islamic teaching. To provide them with hospitality and serve them with good food that we have. Feeling guilty not serving them anything, I dig into the fridge to find anything that could be served. Preferably is to the children's liking and found enough ingredient for and instant pizza-like dish. What I found from the fridge: The plain Kawanku flexi Ready made cooked  minced beef Pizza sauce Vegeies - tomato, broccoli Cheese - mozarella and cheddar Therefor, I decided to: Spread the sauce onto the Kawanku. Topped with the minced beef, vegies and cheese....

Sweet n Sour Chicken Ball

Assalamualaikum dear readers, How is everybody today? Wishing all of you a very happy and prosperous day and days to come. This something that I cooked to be eaten with the Tomarot Rice. It's the simplest dish in the world. The preparing time is also a bliss. I called it the Sweet n Sour Chicken Ball. What do you need to make this dish will be: 5 - 10 chicken ball (depending on the number of customer eating it later) 1 red onion - cut into rings 2 cloves of garlic - crushed and chopped 1 table spoon cooking oil 2 table spoon tomato ketchup 2 table spoon soya sauce 1 cup of water pinch of salt and sugar for seasoning (only if need to) Making it: 1. Heat the cooking oil in a pan. Add red onion and garlic. 2. Once brownish, add the two sauces, add 1 cup of water. 3. Let it boil, then add the chicken ball. 4. Let it simmer. Prawn Sweet 'n Sour

Salam all, Every time we visited the Munawwarah Restaurant in Section 9, Shah Alam (a Chinese Muslim Restaurant), my kids will definitely order the Sweet 'n Sour, be it fish or chicken. Therefore, I'm trying my version today but with prawns. Ingredients 10 large prawns - marinated with salt and tumeric powder. Fried. 1 red onion - cut into ring 3 cloves of garlic - chopped 2 tablespoon of chilli sauce 5 tablespoon of tomato ketchup 1 teaspoon of sugar Salt to taste 1 tomato cut into wedges (to garnish) How to: Saute the garlic till brownish. Add the chilli sauce, tomato ketchup and some water. Let it boil. Add the sugar and salt. Also the onion. Just before turning the stove off, add the tomato. Ready to be served. The two plates are ready for consumption. For a more appetizing meal, I fried some potato wedges and their favourite fish crackers. Not to forget some green as well. The children enjoying their meal. Salam All, Let's talk about the GOURD (labu air) today. From a reading in a book on the food that Rasulallah SAW likes, the gourd is one of his favourite. Ayam Goreng Kunyit

This is one of Sabrina's favourite. Whenever we eat out, she will order this (ye lah kannn, nak order yang lain2 tu banyak sangat pantang larangnya - she's allergic to egg, nuts and coconut milk). Therefore, this became one of my favourite dish to cook too. Especially because it is simple and short cooking time. The Ingredients 1/2 chicken - cut into small pieces and marinate with salt and tumeric powber A handfull of green beans 1 carrot - sliced 1 onion - sliced into ring 1 chilli - for garnishing Cooking oil for frying How to 1. Pour about two tablespoon of the cooking oil onto the pan/ wok (whatever that you like to use for cooking). 2. Fry the chicken pieces until slightly cooked. 3. Add in the carrots, green beans and onion. 4. Finally add the chilli for granishing. You can also add some spring onion or corriander if you like. I dot not have it. After about 5 minutes. ... here they are on your table. TARA!!! Cheerios!!!

Toast & Egg for breakfast

Salam All, Just would like to share a very simple breakfast that I normally managed to prepare in the busy morning. Al-maklum la ... kurang rajin nak prepare yang dahsyat2, furthermore everybody is in a rush to enjoy the breakfast ... biasanya telan je asal perut beralas. However, i would like to begin with a healthy breakfast that i had during vacations. Tara!!!! .... How is it???? Healthy isn't it? Fruits, salad and olives. Mmmm .... marvelous! I love olive, but they did not serve many of it which I have to dig for it. But ..... this is normally serve as the appetizer only!!!! I had many more other things (there goes the 'healthy' items). This is also another breakfast that really enjoy when on vacation. Omelet. Simply delicious!!! Coconut Pancake aka Lempeng Kelapa

Assalamualaikum and good day all, I love this pancake aka. lempeng. In the northern part of the Peninsular (Malaysia), some call it PekNga . Sounds so weird isn't it? Well, it is actually a combination of 'tem PEK di bela NGA '. See, how creative our ancestors are. Not to mention about all the creative dishes they have invented. Wow!!! Tak boleh celen (challenge) nih!!!! Now, close your eyes, imagine yourself on a rainy morning. With hazy eyes, suddenly there's a smell of black coffee, triggering your nostril, followed by an appetizing scent of the fresh grated coconut. Hmmmmm ...... I am hungry again (baru sudah lunch nih!!!). The Ingredients: Approximately 6-7 table spoon of fresh grated coconut (preferably not an over riped coconut) 1 egg beaten 1 teaspoon Salt 1 1/2 cup Plain Water Butter for baking on the pan How To: Place the coconut in a bowl. Fried Squid with potato

Hmm... this is an overdue entry. I even forgotten when I cooked this dish. I browse through my photo collection and come across this photo and feel like posting an entry about it. My kids love this simple dish. Fast and easy to cook. Busy moms! Here you go ... get some ideas: The ingredients: 6 or 7 pieces of squid, cut into three parts (for a large squid or two for a smaller squid), then slice lightly (do not separate it) on each of the cut pieces to form a design on the squid. Next, marinate the squid with some salt and tumeric powder. Let it rest for a while. 1 or tomato cut into wedges and fried. 1 Onion cut into ring 2 cloves of Garlic - crushed some spring onion and red chilli for garnishing 2 table spoon of cooking oil How to: Fry the garlic till yellowish. Then add the squid. Once the squid is cooked, put in the onion, potato, and red chilli. Mix well in the wok for only few seconds or 1 minute. Turn off the stove, add the spring onion and whalla!! .. ready for consumption.
