Cucur Carrot

Assalamualaikum, This is my breakfast. It is the 'Cucur Carrot'. Malaysian is famous with CUCUR. With Cucur Udang, Cucur Bilis, Cucur Jagung, and Cucur Kodok@Cekodok. The base for these cucur is the same. It uses the same batter. Only different in its flavor. The batter differs from one cook to another. My base (batter): About 1 cup of water About 3/4 cup of multipurpose flour A pinch of salt to taste 1 large onion sliced thinly The batter must not be too runny nor too thick. If it is too runny, it will trap lots of oil when frying. If it is too thick, it will be hard when cold. Through experience one can get the correct consistency just by looking at it. Some people use the cold water to mix the batter and others use the hot water. But I simply use the plain water. Almost on alternate mornings, I will make the carrot juice or any other fruit juices. Eggless Purple Coleslaw

Assalamualaykum, This was our dinner last night. We had the coleslaw as a side dish together with the burger. And it is eggless as I am using the eggless mayonaise. Just like the chef in Farm Rules (Astro Channel 727) say, 'Chop Chop .....' , this is also about chop, chop add sauce.  I used about 5 layers of purple cabbage and about 2 inches of carrot for three servings. I thinly sliced the cabbage and grate the carrot. For the sauce (Sorry if I got it wrong), I used: 2 tablespoon eggless mayo 1 teaspoon lemon juice 1 table spoon sweet condensed milk about 1 tablespoon or less olive oil salt and pepper to taste Simply put everything into a bowl. Whisk it to thoroughly mix it. I added olive oil to smoothen the mixture because eggless mayo is thick and tend to be lumpy. This is my first attempt .... and ... Alhamdulillah ... it's delicious. Eggless Scones

Ingredients: A cut-n-paste from Anna Olson's   2 cup all-purpose  flour ¼ cup  sugar (I used brown sugar) 1 Tbsp  baking powder ¼ tsp salt (#omitted because I used salted butter) 1 Tbsp finely grated lemon zest ½ cup cool unsalted  butter , cut into small pieces (I used salted butter) ½ cup whipping  cream (I used buttermilk) ¼ cup 2% milk, plus extra for brushing 1 large  egg (#omitted because Sabrina cannot take eggs) 1 tsp  vanilla  extract 1 cup  fresh  or frozen cranberries (#omitted~ sorry, not at home) Directions: 1. Preheat the  oven  to 375 F and line a  baking  tray with parchment paper. 2. Sift the  flour ,  sugar ,  baking powder  and salt into a large bowl. Stir in the lemon zest. Overnight Oats

Assalamualaikum... Whta's for breakfast? Lunch? Dinner? I recently came across this interesting healthy eating. Overnight Oats. The name came by because you can prepare it during the night. Let it stay in the fridge for the night or two or three and grab it when you feel like eating it. You can make a variety of flavour out of it too. The basic ingredients are really basic: 2 cups of oats (not instant oats - it reduced the health benefits) 3 table spoon of yogurt 2 cups or 1 1/2 cups of fresh milk (These are MY simple ingredients, you can find plenty on the net) Mix everything together and scoop into a jar with lid.  Store overnight. For the varieties: You can add honey or maple syrup for sweetness. Or you can just rely the sweetness from the fruit added to it - berries, banana, mango etc. You can add your fruits when preparing it.  Or you may add it up later whenever you are ready to it. Nasi lemak (Santan-less)

Assalamualaikum all, What's for breakfast today? What's for lunch today? What's for brunch today? . . . I had nasi lemak - packed from home . I had nasi lemak for breakfast and lunch. I had nasi lemak for brunch. As usual, the cook never had time to enjoy the meal on time.  So I had to pack the nasi lemak and enjoy it in my office. Eggless Red Bean Bun

 Assalamualaikum all, I had this crave of eating the home made bun for quite sometime but was unable to find time and strength to do it. Alhamdulillah, last Sunday I had the opportunity to bake one. Sabrina requested for a red bean bun and some sausage rolls - so, here it comes. The recipe came from Alex Goh's bread book. However, I had to modified it a bit as my precious Sabrina is allergy to egg. Here goes my modified recipe: The Ingredients *480 g bread flour *120 g all-purpose flour *110 g sugar *20 g powdered milk *4 teaspoons instant yeast *10 g salt 1 egg (this was substitute with additional (25ml) cold water) 300 ml cold water 60 g butter How to: Mix all the dry (*) ingredients in the mixing bowl. Eggless Moist Chocolate Cake

Assalamualaikum semua, Dah lama tak update entri di sini. Besar sebenarnya cabaran nak update blog masakan.  First, you have to decorate you food nicely. Second, you have to take a photo of the food. Eggless Corn Pancake

Assalamualaikum dear readers, Yes, I know it has been ages since my last update. Well, my usual lame excuse, BUSY. But .... don't get me wrong, this does not mean that I have not been cooking, I do and I did. It's just that I cannot find time to snap a photo of what I cooked and what more to update this blog!! I'm doing it now ...... I made pancake for tea today!!!! With ayah and Hakim off to a feast (kenduri), its only Sabrina and ibu to enjoy it. A simple dish with simple and fast preparation, it only took me less than 30 minutes to get it all done. Ingredients: 1 stalk of fresh corn (grated) 2 cups of milk 1 cup of self raising flour 1 table spoon sugar pinch of salt 1 tablespoon olive oil Method: Whisk everything in a bowl till blend. Heat a non-stick pan. Spoon a mixture onto the pan. Once you see bubble on one side, turn the pancake around. Cook till golden in colour. You may eat it with jem, syrup,  or honey. Bon apetite.

Eggless Kek Batik

Assalamualaikum, First, don't forget to answer my Salam. :-) It's the 12th day of Ramadhan 1433. How is everybody doing? How is your tarawih and taddarrus? Sustain .... insyaAllah. I would like to share Sabrina's favourite. Something edible to her only when ibu cooked it. It's the Eggless Kek Batik . The original recipe requires at least an egg, however, specifically for my dear Sabrina, I made some modification by omitting the egg from the recipe, Alhamdulillah it turned out fine. Here is how my eggless kek batik looks like. My ingredients: *1 bar of butter (250gm) - unsalted is preferable *10 table spoon of milo * 3 table spoon of condensed milk 1 packet of biscuit (biskut Marie is preferred) - break into quaters Methods: 1. Put all the * ingredients in a pot. Melt it on the stove. Stir consistently. 2. Once all the ingredients melt, turn off the stove, and add the biscuits, mix well - evenly. 3. Sabrina's Eggless Brownies

Sabrina had always wanted to bake. She spent one night searching for a recipe that she would want to make. And most importantly, it has to be something that she can eat. She found herself something that she had always wanted to taste but cannot do so because she can't take egg. She found the 'Eggless Brownies' recipe. The following day, I let her to explore my kitchen for the ingredients that could make an eggless brownies. Satisfied with all that are available, she began her quest -- making an Eggless Brownies. Ibu just sit back. It has to be fully hers. However, towards the end, she complained that her mixture were too dry. I went to take a look. She complained that the recipe do not has any liquid, therefore, with my 'skillful' mind, I added 1/2 cup fresh milk into the mixture, which immediately make a smooth batter that could easily poured into a pan. Creamy Chicken Pie

Salam all, This is a pre-Ramadhan cooking. Just trying out few new recipes, to check whether my kids like it or not. If they do, I can definitely make it again during Ramadhan. In other word I am trying to create varieties to my cooking, especially during Ramadhan. My chicken pie normally uses the pie crust recipe with chicken curry and vege as filling. But last Sunday, I tried something different. Actually, I got the recipe from a recipe book sent to me from Naturel cooking oil, as a birthday gift. They'll send me something every year, without fail. Wonder how I got it? Well, years ago I submitted some competition conducted by Naturel but fail to win any prizes. Based on that address and some personal info that they got from the application, every year, they will send me something as a birthday wish, and this year is the recipe book -- Ok jugak kan ..... Eggless Mayo Fruit Salad

Salam All, Hmm ... yummy, yummy. It's lunch time. Looking at the photo below is really mouth-watering (at least to me, I'm not sure about others) This a fruit salad that I made together with the potato salad (from my previous posting). What's important is that it is EGGLESS!!!! Suitable for my dear Sabrina. The Ingredients: 2 red apples - peeled & diced 1 green apple - peeled & diced 5 strawberries - cut into half 2 kiwi - peeled and sliced few baby tomatoes 2 table spoon olive oil* 3 table spoon EGGLESS mayo* 1 teaspoon sugar* How I did it: 1. Mixed all ingredients labelled * in a large bowl. Mixed well till homogeneous. 2. Add all the fruits. Mix well but gently 3. Serve chilled. Mmmmm...... really delicious! Eaten with the fish fritters and potato salad. Enjoy! Cheerios!!!

Potato Salad

Salam, Ini selera Western. Done this before but forgotten due to the time lapse. I searched from the internet, from several web pages and I conclude it with my own style. Most of the potato salad found used mayo ... alamak! Sabrina kan elergik to white eggs - one of the main ingredients in mayo. There's eggless mayo, but the taste is different. So, here it is: 3 potatoes - boiled to tender, then peel- don't forget to add salt to the boiling water, cut into cubes 1 table spoon of olive oil sprinkle of mixed herbs sprinkle of black pepper pinch of coarse sugar some spring onion First, place the olive oil in a bowl. Add in other ingredients except potato and spring onion. Mix well. Finally, add the potatoes and mix well but gently. Spring onion should be added last. Here it is ...... potato salad eaten with ready made Fish fritters Cheerios!!!

Eggless Muffin

Kesian anakku Sabrina. Bukan selalu dia dapat makan muffin. Kalau makan2 kat luar memang dia diharamkan makan muffin, ye la, bukan selalu nak jumpa 'Eggless Muffin'. Mine is an eggless muffin. i have to modify the ingredients a bit to accomodate her. And we, have to accomodate ourselves with the taste. The making is simple and swift. Tear off a packet of muffin mix (bought from any bakery shop). Any flavours that you like, Sabrina likes Kiwi. Pour everything in a large bowl. Follow the label shown on the packet. But, when it comes to adding egg, I will replace it with milk. Mix everything together using a whisk. Get the paper cup ready, and place a tablespoonful of the ingredient into it. Ready to be bake at 180 degree celcius, for about 10-15 minutes (depending on the oven make). So far, replacing eggs with milk works with me. It's fresh milk. But you cannot expect the taste to be the same. Happy trying!!! Cheerios!!!

Ayamas Chicken Burger Wrap

Salam all, It was a tiring day yesterday. We went to KPT Putrajaya at about 10am. The presentation which suppose to be at 11.30am only begin at 1pm. Fuhh!!! What a waiting ...... Finish the session at 2pm. Solat, and had lunch at almost 3pm. By the time we reached the faculty it was already almost 4pm. Reached home at about 6pm, I immediately send the kids to Ustaz Firdaus's house for their Quran session. By that time, I was already in a SUPER TIRED zone. Came back from the quran class, Sabrina's tummy was making noise. Cries to be filled. Ibu ... was too tired to move to the kitchen. What worse is that ibu has not figure out what to prepare for dinner........ Huh.... I walked slowly to the refrigerator, digging into it to find something that can satisfy their hunger pang. Aha! I found 'Roti Arab'. Yes! This can be made into a sandwich wrap. I dig further and found the Ayamas Chicken Burger. That's it! We will have Chicken Burger Wrap tonite!!! The Ingredients: 5 p...

Eggless Oat pancake

Wondering what to prepare for the kids this lazy Sunday morning. Ayah is not at home. so it's just the kids and me. Hmmm...... let's make something that everybody can eat. The ingredients: Self raising flour Fresh milk 2 tablespoon of instant oats Pinch of salt 2 tablespoon of sugar How to: Mix all ingredients to form a batter. Adjust the fresh milk to the thickness that you preferred. Heat the pan (preferably non-stick for easy maintenance). Pour a full spoonful of the batter onto the heated pan. Once the topside shows some bubble shaped surface, turn the pancake. Wait till golden in colour and lift from the pan. Serve with honey or syrup. Sabrina likes it, Hakim loves it, Atikah only had 1 piece to give away for her little siblings.

Bergedil Ayam Rangup (Ala la Chicken Fritters)

Sometimes kids are bored with chicken in it's ordinary form. So let's make it extra-ordinary. I made Bergedil Ayam or can I call it chicken fritters? The ingredients: Chicken breast (minced) Potato (sliced thinly and fried) A tablespoon of corn flour Salt & pepper (to taste) parsley (if you like) Tempura flour (mixed in water) Cooking oil How to: Put all the ingredients except the tempura flour and parsley into a blender. Blend till mix. (Do not overblend as it will turn the chicken quater-cooked). Once mixed, take it out into a bowl and add the parsley. Form the ingredients into small balls and a bit to flatten it. In another bowl, mixed the tempura flor and water to form a batter. Heat the cookig oil. Dip the flatten ingredients into the batter and fry till brownish in colour. Whalla! Simple isn't it. I use the tempura flour to replace the egg which people normally use as my dear Sabrina is allergy to egg. As a result, i got this crunchy chicken fritter(at least the o...
